RAW Strawberry Tarts with Love from Rebecca Kane

Our good friend and Living Foods Goddess Rebecca Kane has given us her wonderful recipe for RAW Strawberry Tarts!

Raw Strawberry Tarts



6 dates and 3-4 Tbs of water

½ cup ground almonds

½ cup ground cashews

1 Tbs melted coconut oil

1 tsp vanilla extract

Pinch of salt


1 cup of cashews soaked for at least 30 mins

½ cup melted coconut oil

1 Tbs vanilla extract

2 Tbs agave

3 Tbs water

Strawberry Syrup

½ cup fresh strawberries

½ cup agave

1 – 2 Tbs dried strawberries




Food processor


Tart cases



Place the dates and water into the food processer and process until you have a date paste

Place all ingredients in to a food processor and process until well combined

Press the mixture into the tart cases

Place in the freezer to firm up


Blend all ingredients together until smooth and creamy


Blend all ingredients together until you get the consistency you are after. More dried fruit makes the jam thicker


Pour cream into the tart bases

Place your fresh strawberries on top of the cream

Cover with the syrup
